Your mistake is confusing the actions of Wahhabi Kharijite heretics as being representative of Islam (according to mainstream Islam they are “the dogs of hell”).

In Islam a Kafir is not a non-Muslim, it is a person who has been called to Islam by Muslims, has had the religion explained to them properly and then rejects.

Even in such a case a Muslim properly educated and well behaved in the religion would certainly not be likely to refer to an individual as a Kafir. Only God knows what is in a man’s heart.
